Trader Joe’s Sourced, Broiler Sheet Pan Meal: Garlic Chicken, Sweet Potatoes, Bell Peppers, and Broccoli

Sometimes a sheet pan meal, be it dinner or lunch, is just what we need. The idea of a sheet pan meal is that you can cook your entire meal on one pan, thereby saving time, utensils, and more. Cooking your foods together also allows flavors to combine so that what you lose in cooking time, you gain in flavor. WIN-WIN!!

This sheet pan meal features ingredients all sourced from Trader Joe’s! The star ingredient is Trader Joe’s Garlic Salt seasoning. Note: I’m not, CURRENTLY hahahah, sponsored by Trader Joe’s. I just really love many of their products and the in-store discovery experience I get when I shop there.

The garlic salt seasoning is simple - only 4 ingredients - yet developed - featuring roasted garlic. I was so surprised at how well it worked on roasted chicken! Prior to this round, I used it with some lemon juice, melted butter, and olive oil on chicken breast. Delicious.

Trader Joe’s Sourced, Broiler Sheet Pan Meal: Garlic Chicken, Sweet Potatoes, Bell Peppers, and Broccoli

Servings: 1-2; Timing: Less than an hour

Ingredients

All from Trader Joe’s - though this can definitely be made with ingredients sourced elsewhere:

Trader Joe’s Garlic Salt

Trader Joe’s Pink Himalayan Salt

1 Chicken Breast, roughly 8oz

3 Mini Sweet Potatoes

1 c Broccoli Florets

5-7 mini Bell Peppers

Olive Oil

(Water, for brine)


Method

  1. Brine your chicken:

    • Add enough fresh water to cover the chicken breast to a bowl and add a very generous amount of salt. Stir to dissolve, add chicken, cover with cling wrap, and place in the fridge for 15-20 minutes.

  2. Preheat your oven to Broil on Low.

  3. Ensure your veggies are ready to go:

    • Wash them all!

    • Peel (if desired) and quarter the mini sweet potatoes.

    • Halve the mini bell peppers.

    • Have your broccoli florets handy.

  4. Start with the chicken and sweet potatoes:

    • Once your chicken has been brined, butterfly cut it and place it on a half sheet pan in the center of the pan.

    • Add the sweet potato quarters on one side of the chicken.

    • Drizzle the chicken and potatoes with roughly 2 tsps each of olive oil.

    • Sprinkle the pink himalayan sea salt over the sweet potatoes. Toss to coat.

    • Sprinkle the Trader Joe’s Garlic Salt seasoning, generously, over the chicken. Rub the oil and seasoning over both sides of the chicken, ensuring a relatively even covering.

    • Broil the sweet potatoes and chicken for 10 minutes.

  5. Prepare the bell peppers and broccoli while the sweet potatoes and chicken broil: 

    • Toss the bell peppers and broccoli florets with 1-2 teaspoons each of olive oil and a sprinkling of pink himalayan sea salt. Also, mix about 2 teaspoons of olive oil with some Trader Joe’s Garlic Salt seasoning and get a brush or spoon ready for spreading.

  6. Add the bell peppers and broccoli:

    • When the sweet potatoes and chicken are done with the first 10 minutes of broiling, remove the pan from the oven very carefully.

    • Flip the chicken and brush on the oli/garlic salt seasoning mix.

    • Stir/flip the sweet potato wedges.

    • Add the bell peppers and broccoli to the pan on other side of the chicken.

    • Broil for an additional 10 minutes on Low then finish on High for 3-5 minutes. Optional: Remove the veggies before finishing on High Broil to avoid charring them too much.

  7. Let the chicken rest for a few minutes, slice, and serve with the veggies! Enjoy :D
